We've all had stuffed peppers growing up, and while they aren't unhealthy (if made in a healthy way!), here's a different take on the recipe!
Instead of stuffing peppers, you stuff zucchini!
(And yes, they're really as delicious as they look!)
- 1 medium zucchini
- 1/2 cup mixed vegetables, chopped
- 3/4 cup lean ground beef, turkey, or chicken
- 1/4 cup brown rice or quinoa, cooked
- 1/4 cup shredded mozzarella cheese
- 1 tsp olive oil
- seasoning to taste
Preheat oven to 375 degrees.
Heat oil in pan on medium. Add meat and seasoning. Mix.
While meat is cooking, use a spoon to scoop out the insides of the zucchini.
Once meat is browned and cooked, add in veggies. Mix.
Cook for 3-4 minutes, or until softened.
Once vegetables are softened, add in rice/quinoa. Mix.
Cook for 1-2 minutes. Just enough to heat the rice/quinoa.
Add meat/veggie/rice mixture into zucchini.
You'll probably have some leftover. You can eat it on the side, or save it for a future dish.
Add mozzarella cheese on top.
Find a way to use all of it ;)
...I mean, who doesn't love something smothered in cheese?
Bake at 375 for 8-10 minutes, or until cheese is fully melted.
(My favorite step!)
For this photographed recipe, I used the smoky southwestern seasoning, ground pepper and a little bit of sea salt. You can use your own recipe, or homemade taco seasoning. And yes, I said HOMEMADE. Not that sodium filled, store bought stuff ;)
I used ground turkey for the meat, although I personally prefer this recipe with ground beef.
The veggies used were mushrooms, green and red peppers and onions.
I already had all of these prepped and chopped up beforehand.
I've used corn, black beans and tomatoes as well!
I also used brown rice that I had previously prepped.
(Because meal prep is the key to healthy eating!!)
