I don't know about all of you, but I LOVE a good bowl of chili...but I also LOVE chicken.
Therefore, here's a healthy white chicken chili that will warm you up on cold nights and give a little variety to your meal plan!
-1 pound chicken
-4 cups low sodium chicken broth
-1 onion, diced
-2 tbsp minced garlic
-1 can fire roasted tomatoes
-15oz great northern beans
-15oz red pinto beans
-1/2 cup whole wheat flour
-1 tbsp olive oil
-2 tbsp oregano
-1 tbsp cumin
-1 tbsp black pepper
-1 tsp sea salt
-cheddar cheese for topping, optional
Saute onion and garlic in oil until browned.
Dice chicken and cook on low/medium heat until fully cooked.
While chicken is cooking, combine chicken broth, beans, tomatoes, and spices in pot.
Bring to boil.
Once chicken is cooked, add to broth.
Add 1/4-1/2 whole wheat flour to thicken.
**Start with a little and keep adding until you get a desired consistency.
Serve with 1/4 cup cheddar cheese on top.
This is a perfect winter recipe and a perfect alternative to regular chili.
Mess with the spices a bit until you create a chili you absolutely LOVE!!
