-1 tbsp olive oil
-½ onion-½ cup chopped sweet peppers
-1-2 chicken breasts (or 4oz tofu)
-1 tsp salt
-1 14oz can garbanzos, drained
-1 tbsp garlic powder
-6 cups kale
-¼ cup vegetable broth
(I used beef because that's all I had!)
Heat oil in pan and add onions.
Let them start to brown a bit.
Flavor with salt and pepper to taste.
Cook on high until cooked through.
Add garbanzo beans and peppers.
Cook for another 4 minutes or so.
Add garlic powder, vegetable broth, and kale.
Continue to mix until kale is wilted, but still has a crunch.
This whole recipe makes 2 GIANT servings. It's so healthy and filling, it is sure NOT to disappoint!
