I'm a huge breakfast lover, and to be honest, when thinking about today's post, I was kind of lost on what to post because I just wanted some breakfast for dinner.
But then I thought about it, and I figured, if I love breakfast for dinner, then OTHER people must love it too! And this is one meal my husband (aka the pickiest eater alive) NEVER complains about.
So ta-da! Let's eat breakfast for dinner :)
-1/4 cup (ish) milk or almond milk
-1 cup chopped veggies
(I used mushrooms, spinach, broccoli and tomatoes)
-1/4 cup shredded or feta cheese
-1 tsp olive oil
-1-2 tsp hot sauce
-2 pieces whole grain dry toast (optional, on side)
Saute oil and vegetables for 3-5 minutes on medium heat.
In a separate container, beat eggs, milk, hot sauce, pepper and salt.
Add veggies once cooked.
Pour omelette mix into large pan (about the size of a plate).
Cover for 2-5 minutes.
Once eggs are MOSTLY cooked, add cheese and spread out.
Cover for 1-2 minutes.
Fold omelette in half.
Cook for an additional 30 seconds.
Yes, this is a SUPER simple recipe this week, but I LOVE eggs and I'm all about eggs, veggies and cheese together. So enjoy! And eat some breakfast for dinner every once in a while!
