One of my family's favorite meals is spaghetti and meatballs. It's tasty, it's quick - but the traditional way is NOT so healthy.
So, I've ventured into the wonderful world of homemade spaghetti everything! (Aside from the noodles...but give me time!)
Up this week, homemade turkey & mozzarella meatballs!
-1lb lean ground turkey
-1 tbsp tomato paste
-1/2 onion, minced
-1/2 cup whole wheat bread crumbs
-1/2 cup shredded mozzarella cheese
-1 tsp oregano
-1 tbsp parsley
-1 cloves garlic
-1/2 tsp red pepper flakes
-1 tsp black pepper
-sea salt to taste
Preheat oven to 400 degrees.
Mix all ingredients together by hand.
Separate and roll mixture into 1" balls.
Place on a greased, lined baking sheet.
Bake for around 20 minutes.
**Make sure they're golden brown & cooked throughout.
Makes about 10-15 meatballs per batch.
(I made a double...2 meals for 4 people!)
I always put off making my own meatballs because I thought it would be this whole huge, long process, but in fact...it was the opposite. It took more time taking the photos than it did assembling everything!
I let these simmer in the (homemade) pasta sauce for about 20 minutes before serving.
So yummy, and best yet - homemade!
