I'm a big fan of chili, and I'm a big fan of simple cooking. And guess what? This recipe includes both of those attributes!
This is straight from the 21 Day Fix Extreme book's recipe section...with a bit more kick on the spices. It was quick to put together, delicious to eat, and nice and clean for my body!
Oh, and LOTS of protein :)
-1.5 pounds ground turkey
-1 tsp olive oil
-1 onion, diced
-1 green pepper, diced
-3 cloves of garlic, minced
-1.5 tsp cumin
-2 tbsp chili powder
-1/2 tsp sea salt
-1 tsp cayenne pepper
-1 tsp red pepper flakes
-2 15oz cans black beans, rinsed and drained
-1 15oz can diced tomatoes with liquid (I used fire roasted!)
Saute green peppers, onion and garlic for 1-2 minutes on medium heat.
Add in ground turkey.
Cook until meat is no longer pink.
Stir in spices, beans and tomatoes.
Bring to a boil.
Reduce heat to low.
Cook for 15-20 minutes, or until thickened.
Like I stated above, this is SO simple and SO good. It makes 6 cups (or a little more).
For one cup, it's considered 1 red, 1 green, 1 yellow.
