I have had an obsession with Larabars lately. Specifically, the peanut butter chocolate chip kind.
BUT unfortunately, this obsession can get quite expensive at $1.50 per bar.
So, what was I do to? MAKE MY OWN, DUH!
And holy moly, are they DEEEEEEE-licious!!!
-1.5 cups unsalted peanuts
-16oz pitted dates
-2/3 - 1 cup chocolate chips (I use dark)
-1 tbsp peanut butter (optional)
-1/2 tsp sea salt
-2 tbsp water
Place peanuts in a food processor.
Process for a few minutes until they reach the consistency of the second picture.
Add dates and peanut butter.
Add chocolate chips, salt, and water.
Process until the mixture starts to ball up.
**If you need to, add 1-2 more tbsp water.
Put mixture into a 9x9 (or similarly sized pan).
**DO NOT COAT IN SPRAY OIL
***You might need to pat off some of the oil from the peanuts off the top
Refrigerate for at least 1-2 hours.
Cut into 12 (or more) equal rectangles/squares.
**You can even make little larabar balls instead!
Try not to eat the whole thing.
Yes, they're that good.
These are SUPER good. Both my toddler, and I LOVE them!
They are the PERFECT substitute for a healthy chocolate fix when that sweet tooth kicks in!
You can halve the recipe if you want...but you probably won't want to ;)
