The weather is getting colder, people are getting colds, so what's the natural food reaction? Soups! Soup season is now upon us!
I'm guaranteeing you guys will be getting LOTS of soup recipes throughout the season because well, I love soup.
I cannot and will not take credit for this recipe (although I did make minor tweaks!) This is 99% my mother in laws recipe :) And who doesn't love mom's cookin'?
-3 tbsp olive oil
-3 cloves chopped garlic
- 2 onions, chopped
-1 cup celery, chopped
-5 carrots, sliced
-2 cups water
-2 cups tomato sauce
-2 cups diced tomatoes (organic & no salt added)
-1 can great northern beans (organic & no salt added)
-1-2 cups green beans
-2 cups baby spinach
-2 zucchini, chopped
-1 yellow squash, chopped
-1 tbsp oregano
-2 tbsp basil
-salt & pepper to taste
-rice or quinoa pasta (on the side)
In a large pot, sauté garlic for 2-3 minutes.
Add onions. Sauté 4-5 minutes.
Add carrots and celery. Sauté 1-2 minutes.
Add vegetable broth, water, tomato sauce, and diced tomatoes.
Bring to a boil, stirring frequently.
Once boiling, reduce heat to low.
Add remaining ingredients, aside from the pasta.
Simmer for 2 hours.
When 2 hours approaches, cook pasta according to directions.
Place 1/2-3/4 cup cooked pasta in bowl.
Cover with soup.
Top with shredded parmesan cheese.
This soup is SO good and SO healthy for you! It's literally made up of mainly vegetables and liquids.
Oh, and it makes lots of leftovers as well :)
