I absolutely love crackers with my hummus. I'm honestly addicted. And guess who else is? My son.
So, of course, now that I'm going through crackers extremely fast, as well as thinking about what I'm giving to my son to eat.
Have you ever read the millions of ingredients that go into crackers? Yeah, me too. That's why I decided to try my own!
-1 1/2 cup whole wheat flour
-1 1/2 tbsp coconut crystals
-1/2 tsp salt + more for sprinkling on top
-1/4 teaspoon paprika
-4 tbsp butter
-1/4 cup water
-1/4 tsp vanilla extract
Preheat oven to 400 degrees.
Mix dry ingredients together.
Add butter and process until the mixture begins to look like a bread crumb mixture.

Add water and vanilla, and process until a dough forms.
Place the ball of dough directly on a wax sheet.
Roll it out VERY thin. I'm talking 1/8 of an inch or thinner.
**The thinner they are, the crispier they'll be!
Once you have the dough rolled out, cut into squares.
**You can cut the ends and re-roll, but I just cut them off,
and left them in weirdly shaped pieces on a different baking sheet!
Bake in preheated oven for 5-10 minutes until golden brown, and crispy.
**BE SURE to watch these. They can and will burn easily if you forget about them!
Break pieces apart.
Store at room temperature in an air tight container!
These are super easy to make, and you can even have your kids help you by using cut outs to make animal crackers.
These aren't extremely flavorful, but to me, the flavor lies in what you dip or spread on them.
You can also try adding in different spices to make different flavors!
