Most people who know me (or see me eat) know that I'm pretty boring when it comes to food...other than sweets. I can probably have the same 5 meals for months at a time. However, after doing that for months AND months, I decided I needed a change.
I'm once again on the 21 Day Fix eating plan (doing a fix/piyo hybrid!) and decided to give some baked ziti a shot! Easy peasy, tasty, and healthy!
-1/2 box whole wheat/quinoa penne pasta
-3/4 cup part-skim ricotta cheese
-1 jar homemade/clean tomato sauce
-1 lb Lean Ground Turkey
-1 cup Italian Cheese, shredded
-1 tbsp each garlic powder, onion powder,
italian seasoning, basil and black pepper
-1 tsp Balsamic Vinegar
-1 tsp Honey
Preheat oven to 350 degrees.
Cook pasta until a little more than al dente.
While pasta is cooking, brown the ground turkey.
Once pasta and meat is done, combine everything into a large mixing bowl.
Transfer to a greased 13x9 baking dish.
(You can save a little cheese to sprinkle on top!)
Bake at 350 degrees for 20ish minutes.
(and try not to eat it all!)
Like I said, wham, bam, thank you ma'am easy peasy dish!
(Er - was that appropriate?)
If you're doing the 21 Day Fix, just fill a green/purple container for portioning!
1 Yellow, 1 Red, 1 Green, 1 Blue
