I'm sure by now you've figured out that I have quite the sweet tooth - which has only been amplified lately due to my pregnancy.
Well, I've become quite the cookie monster lately too, so I decided to try out a new recipe using two of my favorite things - chocolate and chick peas.
I know...just the thought of those mixed together DOES NOT sound appealing, but let me just say...this batch of cookies DID NOT last more than 2 days between myself and my son.
Therefore, I am officially a chick pea cookie advocate!
-1.5 cup cooked chick peas (15 oz can, rinsed and drained)
-5 medjool dates, pits removed
-2 tbsp honey
-1/3 c nut butter
-1/2 tsp vanilla extract
-1/2 tbsp baking powder
-1/2 c mini chocolate chips
Preheat oven to 350 degrees.
Combine all ingredients EXCEPT chocolate chips in food processor until it's a smooth consistency.
**If dates are firm, soak them in hot water for 10 minutes first!
Add in chocolate chips.
STIR, do not process!
**The dough was still warm from processing in mine...so it made the chocolate melt a little while stirring!
Transfer 1 tbsp of dough per cookie onto baking sheet.
**You can leave them in balls or flatten out. Whatever way you put them in, that's how they'll come out!
Bake at 350 for 12-15 minutes.
These will be soft, but that's okay ;)
This amount made about 18 cookies. And ALL 18 were gone within 2 days.
They are SO good.
And SOOOO cheap to make!!! A can of chick peas is usually 60 cents ish!
Let me tell you...VERY healthy mom friendly AND toddler approved :)
