This is one of my favorite, easiest, most delicious, healthy & 21 Day Fix approved dinners BY FAR. The key to making it quickly - meal prep!!
This recipe is extremely simple, yet extremely satisfying ;)
-1/2 cup seasoned diced chicken, cooked
-1 cup vegetables (I used mushrooms, broccoli, onions and peppers)
-1/3 cup quinoa, cooked
-1/4 cup or less feta cheese
-1 tsp olive oil (or spray)
-dash of sriracha (optional)
On medium heat, heat up olive oil or spray.
Stir occasionally until they soften (but still have a crunch!)
Add chicken and quinoa.
Cook until heated through.
Add feta cheese.
Stir until heated through.
Add sriracha if desired.
(I say YES!)
Remember, I said the key to making this recipe quickly is meal prep!
Have you vegetables cut up, and both your chicken and quinoa cooked prior to making this.
Not only will it be super fast, but it is very healthy and delicious!
And 21 Day Fix approved!
1 red, 1 yellow, 1 green, 1 blue, 1 tsp (if you used olive oil!)
