Ever since I was little, I was obsessed with chicken nuggets. Tasty, but holy crap bad for you. Not to mention, I've gone through phases of my life where I was a vegan or vegetarian. SO, I had to find a healthy alternative.
The first step - just baking cauliflower florets with olive oil, spices and hot sauce. These were good, but they weren't crunchy... so I knew I could do better.
And thus, THESE WERE BORN. And holy crap, I'm pretty sure I could eat these daily. The best part? All whole ingredients...and 21 Day Fix Extreme approved!
-1/2 head of cauliflower
-1 egg , beaten
-1/4 cup oats, ground
-1/3 cup mixed shredded mozzarella & cheddar cheese
-1/2 tsp parsley
-1/2 tsp basil
-1 tsp garlic powder
-1/2 tsp sea salt
-pepper to taste
-1/2 cup organic, clean pasta or marinara sauce
Preheat oven to 400 degrees.
Chop cauliflower into florets and steam until soft.
Grind 1/4 cup oats in a food processor.
Does not have to be super fine.
Once cauliflower is soft, process in food processor.
**It's okay if there's still some chunks**
Using a paper towel (a few paper towels) or cheesecloth, strain water out of cauliflower.
Mix all ingredients together.
Mold into little patties.
(1/2 head makes about 6-8)
Cook at 400 degrees for 7 minutes.
Flip, cook for an additional 7.
Enjoy with pasta or marinara sauce!
Oh. My. God. These are SO FREAKING GOOD.
