I think it's safe to say that if you exercise or have an on-the-go lifestyle, you most likely eat protein bars. I think it's also safe to say that if you eat protein bars, you probably hate how much just ONE can cost.
Here's a super easy, delicious, and cost effective way to get some quick protein on the go - without all the extra added ingredients that you can't even pronounce anyways ;)
-1 scoop protein powder (I use Vega Sport)
-2 tbsp peanut butter
-1 tbsp oats
-2-4 tbsp almond milk or other liquid
-¼ cup dried unsweetened coconut
Combine all ingredients in food processor aside from almond milk.
Once ingredients are blended, add almond milk.
Process until the mixture becomes sticky.
Divide mixture into 6-8 equal logs.
(Yes, I know what these look like!)
Lay out the shredded coconut on a clean, flat surface.
Smush and shape each log into a rectangle.
Coat both sides with coconut.
Repeat with each log until finished.
Place on tray and store in refrigerator for 1-2 hours.
You can individually wrap these in wax paper or clear wrap for easy storage on the go!
Once again, these are perfect for anyone who wants a quick, easy way to make protein bars.
AND it's also a great snack for a picky toddler who needs more protein in their lives!
