When I was growing up, Sunday morning meant a plethora of delicious breakfast foods. Scrambled eggs, bacon, buttered toast, french toast and my favorite - pancakes.
But, being the health conscious Mom that I am, I don't like to feed Jackson these types of high fat foods. Okay, scrambled eggs aren't bad, but the rest...yeah, not so much.
So, I set out to figure out how I could make something delicious, yet healthy on Sunday mornings (or any other day) for my babe. Lucky for us, (and you!), I figured out an absolutely delicious, easy, simple and kid tested - health conscious Mom approved recipe for pancakes!
-1 1/2 ripe (or overly ripened) bananas
-1/8 tsp baking powder
-cinnamon to taste
-mix ins, optional
Place banana in mixing bowl and mash. I always use a banana masher, but prior to getting one, I used a fork.
Place eggs in mashed bananas and mix.
Place baking powder and cinnamon in mixture. Mix.
Scoop mixture onto griddle (as pictured) or in pan. I use a small scoop for little, toddler sized hands.
Flip after you see that the baking soda has activated. I usually do this after 3-5 minutes.
Cook on both sides until they're a golden brown.
AND VOILA! They're DONE and ready to ENJOY :)
I always top them off by drizzling honey over them!
These are also great for my son especially. He's not a big meat eater at all, so this gives him a good dose of protein!

Like I said, these are super easy to make and super delicious to eat. You can create your own kinds of pancakes by adding in things like raisins, fruit, nuts, or dark chocolate chips.
The possibilities are endless!
