I'm a HUGE granola lover - always have been. I love it in my yogurt, by itself, and even thrown on my "ice cream" occasionally.
But...one problem. Almost ALL store-bought granola is LOADED with sugar, molasses, and other syrups. The ingredient lists seem to go on and on, and I always have a guilty feeling whenever I eat it!
Solution: Make my own healthy version! And guess what? It tastes AMAZING....as usual ;)
-2 cups rolled oats
-1/2 cup shredded coconut
-1/4 cup flax seeds
-1/4 cup cocoa powder
-1/6 cup melted coconut oil
-1/2 teaspoon vanilla extract
-1/6 cup honey
-1/8 cup coconut crystals/sugar
-1/2 cup of chopped nuts or shelled seeds (optional..I used almonds!)
-1/4 cup mini chocolate chips (optional..I didn't use them!)
Preheat oven to 350 degrees.
Mix together oats, coconut flakes, flax seeds, and nuts. Set aside.Mix together cocoa, coconut oil, vanilla, honey, and coconut crystals until smooth (basically). Set aside.
Pour chocolate mixture over the oat mixture in the large bowl and stir until all the oats are coated.
Spread evenly on a baking sheet.
Bake for 15 minutes.
After 15 minutes, return mixture to mixing bowl, and stir once again.
Return to baking sheet and spread evenly once again.
Bake for another 15 minutes.
If you want to add the chocolate chips, you can do so once it's cooled completely.
This is such an easy recipe to make, and you can make A LOT of granola!
With the prices of granola these days, this is much cheaper (and healthier) to make at home!!
