Anyone who knows me knows that I have a GIANT sweet tooth. Yes, Shakeology helps me curb my cravings A LOT, but I don't think anything on this Earth could take them away completely.
So, what's a girl who strives to be healthy to do?
Find healthy alternatives, DUH! I always need to have some form of sweet in the house, or...you know, multiple options of sweets!
This is a PERFECT addition to satisfy my craving without all of the guilt! I know it will be for all of you too!
- 1 can black beans, rinsed well and drained
- 2 eggs
- 3 tbsp coconut oil
- 1 tsp vanilla extract
- 1 tsp baking powder (not pictured)
- 1/2 cup coconut crystals (or honey)
- 1 tbsp + 1 tsp honey (optional)
- 1/4 cup + 1 tbsp cocoa powder
- 1/8 tsp sea salt
- 1/4 cup dark chocolate chips
- 1/4 cup unsweetened coconut flakes
*Need food processor OR blender*
Preheat oven to 350 degrees.
Rinse black beans thoroughly.
Add all ingredients into food processor or blender except dark chocolate chips and coconut flakes.
Process well until the black beans are no longer whole.
Once processed (see left picture), add in dark chocolate chips, and coconut flakes.
Process only for a few seconds until mixed.
Pour batter into a greased 8x8 brownie pan (or 7x9 like I have).
Cook for 20 minutes.
Sprinkle some coconut on top.
Cook for an additional 5 minutes, or until toothpick comes out clean.
Let cool for 30 minutes, then...
Try not to eat the whole pan ;)
I adapted this recipe from My San Francisco Kitchen, but I personally used coconut crystals instead of sugar. I've also used honey instead, which makes the brownies even fudgier! I also chose to use coconut oil instead of vegetable oil, and I would recommend either coconut oil or olive oil!
You can of course make this recipe your own with different mix-ins. Try chocolate raspberry with raspberry extract! Or toasted almonds with chopped up almonds mixed in! The possibilities are endless!
These are a MUCH healthier option (and gluten-free, if you're interested in that aspect,)
and they are also FILLED with protein!
