Okay, so, I LOVE muffins. Always have. Always will. In fact, whenever I go to an airport, I usually get a muffin for breakfast. The theory of muffins are to provide a good, wholesome breakfast that would fill you up for hours - which they fill you up, but most are FAR from wholesome. More like packed full of sugar!
SO, I have been on a mission to create a healthy muffin. But the problem was - healthy muffins just did NOT taste good. However, that streak has broken, and VOILA! Healthy, delicious, (and toddler approved) muffins!
-2.5 cups oats
-2 tbsp chia seeds
-1/2 cup honey
-1 tsp vanilla extract
-1 cup greek yogurt
-2 tsp baking powder
-1 tsp baking soda
-1 cup blueberries
Preheat oven to 350 degrees.
Grind oats in food processor for 10-15 seconds.
Add in the rest of the ingredients (minus the blueberries) and process until smooth.
Stir in blueberries.
Spray muffin tins.
Divide batter evenly between 12 cups.
**Do not fill up half way - these will not rise like normal muffins**
Bake for 18-20 minutes at 350.
Remove when they are golden brown on top.
Remove from oven and place on wire rack to cool.
Seriously, these are SO moist! I made these last night, and my son has probably eaten about 3 already...and maybe I have too! They have clean ingredients, are heart healthy and have just the right amount of sweet to be delicious! Try not to eat them all in one day ;)
