Although I love to cook, I've been on this thing where I have been trying to cook as little as possible - you know...time management while staying healthy!
So this week, I made a recipe that feeds 6 - aka, feeds me 6 times ;) And I was a little worried that it MAY be all soggy once reheated, but worry not my lovelies! These are almost better the second time around!
-1 pound ground chicken
-1 packet low sodium or homemade taco seasoning (I use homemade)
-1/2 large onion
-1.5 cups low sodium black beans
-3/4 cup shredded cheese
-3/4 cup organic or homemade salsa
-6 whole wheat or multigrain tortillas
-3/4 cup guacamolpea (optional)
-hot sauce (optional)
Preheat oven to 365 degrees.
Fully cook on stovetop with all but 2 tbsp of taco seasoning.
Saute onions and black beans with the remainder taco seasoning.
Dice jalapeño while these are cooking.
Mix chicken, black beans and onions.
Divide chicken/black bean/onion mixture evenly between 6 tortillas.
Top each with jalapeño, 2 tbsp cheese, and 2 tbsp salsa.
Place tortillas in the oven at 365 for 15 minutes.
Enjoy and top with 1-2 tbsp guacamolpea and/or hot sauce!
These are absolutely delicious and will be a hit with the whole family!
21 Day Fix equivalents:
1 taco = 1/2(ish) red, 1.5 yellow, 1/2 blue, 1/4 green
**add 1/2 blue if using guacamole
I'm a soup lover. And I'm a simple recipe lover.
The fewer the ingredients, the better to me. And it's especially awesome if it tastes amazing in the process.
This...is one of those recipes! And as most of my recipes...it's 21 Day Fix approved ;)
-3 cups cooked, shredded chicken
-15 oz corn, drained & no salt added
-15 oz black beans, drained, rinsed & no salt added
-15 oz can fire roasted tomatoes, drained
-4 cups low sodium chicken broth
-2 tbs parsley
-1 tsp cumin
-1/2 tsp sea salt
-1 tsp pepper
Boil chicken until fully cooked.
Shred with a fork.
Combine all ingredients into pot.
Cook on medium for 30-40 minutes.
And top with a little shredded cheese!
Like I said, I think the best recipes are sometimes the most simple ones. This one fits that bill!
It's easy, quick, healthy and straight to the point.
Oh, and delicious!
Makes roughly 6 cups.
For my 21 Day Fixers:
1 cup = 3/4 red 1/4 green 1 yellow
**optional 1/2 blue topping**
...but let's be real, you'll probably have 2 servings!
I'm from Buffalo, NY...aka the land of buffalo wings. This isn't a buffalo wing recipe, but it is buffalo chicken inspired.
This is seriously such a sinfully healthy recipe and will leave your whole family wanting more!
The perfect blend of chicken, hot sauce and cheese....lots of cheese ;)
-3 3/4 cups shredded chicken
-3/4 cup plain greek yogurt
-1/2 cup hot sauce/tabasco sauce
-2 cups shredded mozzarella cheese
-3 cups cooked whole wheat noodles
-1 tsp garlic powder
-1 tsp onion powder
-1 1/2 cups chicken broth
Preheat oven to 350 degrees.
Boil chicken covered in water.
Boil noodles. Set aside.
Once chicken is fully cooked, shred using 2 forks.
**DO NOT dump the chicken water!**
Mix all ingredients together.
Use 1.5 cups of the water you boiled the chicken in as the chicken broth.
Combine everything into a baking dish.
Bake at 350 for 25 minutes.
Seriously, you guys will not want to stop eating this! It is AMAZING.
It tastes SO sinful, but it's not bad for you at all...aside from the cheese.
But that's why this makes 6 servings :)
